Since Harry used "sectumsempra" on him, which is a curse he created and wrote in the book, he knew that he had been using his book. Yeah, I guess he didn't have to tell Harry that it was him, but whatever.

One of the things I hate about movies is when they feel like they need to make villains hiss and growl like animals when they're clearly otherwise normal humans, besides being evil or whatever.
